BIANCO is an ode to our favourite whites for the season. Whether you prefer them lean, clean and mineral, textured and perfumed, or savoury and spiced, we hope to shine a light on the breadth of diversity to be found from these varieties.

Adelaide Hills, South Australia
Sauvignon Blanc from a small parcel of thirty year old vines planted over a particularly steep slope of quartz and slate. The grapes were pressed slowly to terracotta amphorae for a year of rest, with a cooler vintage having rendered a compact, nuanced expression of the grape that marries gentle scents of exotic fruits, flowers and stones to beautiful effect.

Roussillon, France
A blend of Grenache Blanc, Vermentino and a touch of Muscat d’Alexandrie, grown by a friend of Francesco’s over sandy soils at the foot of Les Albères mountains in the Pyrenees. The grapes were foot-trodden, and spent a short amount of time on skins before being pressed to concrete until the following spring. A gorgeous shade of gold, it is gently perfumed with lavender and peach, whilst the palate offers refeshing notes of pith and salt.

AJOLA
Bianco (Se) 2023
Umbria, Italy
A blend of Procanico, Malvasia and Verdello planted over clay and limestone in Pitigliano. The grapes were fermented on the skins as whole bunches for five days, before being pressed to vats. The result is a hazy, vibrant maceration that is all pith, zest and chalk.
