AJOLA
Once Upon a Time 2024
Umbria, Italy

Sangiovese from forty year old vines planted over alluvial soils from a parcel Jacopo farms in Osarella. The grapes were destemmed, and the wine fermented on the skins for a fortnight before being pressed to vats for a year of rest. Bright cherry-red in the glass, you feel the freshness of the vintage here, the fruit seasoned gently with cool herbs, which lend a little lift and intrigue. Being from Umbria, it is no surprise that this is a go-to wine for us with anything from the grill.

Catalonia, Spain

A blend of Tempranillo, Morenillo, Garnacha and Carinyena from vines young and old, from small plots planted over limestone in several villages. The majority of the grapes were pressed directly, whilst a small amount fermented as whole bunches for a few weeks, before being pressed and assembled into vats to rest until the following spring. The result is a sun-kissed vi de taula that is heady with red fruit, earth and spice.

A field blend of seven varieties, red and white, from gorgeous old vineyards up to a hundred years of age, planted amongst fruit trees on clay and limestone. This spent just a day on skins, before being pressed off to vats for two years of rest. The result is a deep, complex wine that sits somewhere between rosato and light red, pairing red cherry, blood orange bitters and a beautiful, cleansing acidity to great effect.
